SEATTLE - It's where Old World meets the New World.
Cremant is a rustic French bistro in Madrona which chef Scott Emerick and his wife Tanya opened in March.
"The name in France is sort of a word that's reserved for sparkling wines made outside of the Champagne region in France," says Scott, who grew up in Bellevue.
You'll find plenty of Cremant on the menu, along with a list of what Scott calls "the greatest hits of Bistro cooking."
"A lot of different charcuterie, duck confit, cassoulet...we have fish in beurre blanc sauce, bouillabaisse...things like that."
To add to the romantic, yet comfortable atmosphere of Cremant is a list of vert decadent desserts like cognac au chocolate, crème brulee and chocolate mouse - both served in surprisingly generous portions.
"This to (my wife and I) is sort of inspired by our favorite places in Paris, and just pulling little bits from those things and recreating a little bit of that spirit here," Scott says.
Scott, who graduated from culinary school in Paris in 1998, also wanted to capture the "dining as a way of life" aspect of French living.
"Whether it's going into a cafe and having a Coke in the afternoon or something and sitting on the patio, everything is sort of appreciated when it comes to the table there. It's pretty fun to experience."
Speaking of lounging on the patio, Scott is about to open an outdoor seating area just in time for summer. His menu will also reflect the season.
"You know, we're looking at all the seafood that is going to be available to us and just whatever the purveyors are bringing in. We can't wait to see some of the produce."
After cooking at some of Seattle's most celebrated restaurants like Le Pichet, Harvest Vine and Lark, it's Scott's turn now to create his own loyal following.
"I hope that they come in and really enjoy themselves and enjoy what they eat and drink and feel that they've been taken care of and go home happy and sleep well."
