Yield-4-6 servings
1Side Sockeye Salmon
4 cups Teriyaki Marinade (see recipe below)
Instructions:
Marinade Salmon for 2-4 hours before placing on a medium high heat BBQ. (The coals should be totally white). Place the salmon skin side down on two pieces of tin foil. The foil should be double thick so it will not break when moving. Curl the edges up about 1 inch on all sides to make a “boat” for the marinade. Pour the marinade over the fish and let rest until ready to place on the BBQ. When it is time to place the fish on the heat. Move the tin foil on top the BBQ so it has indirect heat to it. I like to move all of my coals to one side and let the fish sit on the opposite side so as not to burn. Cool slowly for about 20 minutes or until cooked through. Remove and serve with Rice and grilled vegetable or any sides you prefer.
Teriyaki Marinade
1 1/2 c. soy sauce
1 1/2 c. water
2 tbsp. oil
6 tbsp. vinegar (I like rice wine but any you prefer will work)
2 Cups brown sugar
4 cloves garlic, chopped
4 tbsp. Worcestershire sauce
Instructions:
Combine all the ingredients and pour over fish. Make sure there are no lumps of sugar. It need s to be completely dissolved.
