It’s Seattle vs. Portland tonight in Knife Fight

The Esquire Network original series Knife Fight centers around underground cooking competitions featuring some of nation’s biggest chefs. Tonight, Seattle’s Jason Wilson (of Crush), goes up against Portland’s Greg Denton (of Ox).

Denton helped Wilson with Crush, and the two have worked in each other’s kitchens and are friendly. Nevertheless, a competition is a competition! Wilson is the 2010 James Beard Award winner, and Denton is a two-time nominee.

In the half hour episode, host Ilan Hall (winner of the second season of Top Chef) gives the chefs three special ingredients and one hour to create two dishes in his downtown LA restaurant The Gorbals.

We don’t want to give anything away, but we will tell you that tonight’s ingredients are juniper berries, chicken gizzards and conger eel.
