Island Style Banana Bread

This Better Homes & Gardens recipe (it won $200 for a contest submitter from Louisiana in 1998) was advertised as a 'tropical teaser' due to the surprise center filling of cream cheese and coconut.  Delicious served warm with a cup of black coffee!

Island-Style Banana Bread

Bread Batter:

2 cups of flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 tsp ground cinnamon
1/2 cup butter, softened
1/2 cup packed brown sugar, divided
2 eggs
1 tsp vanilla
1 cup (about 3) mashed ripe bananas
1/2 cup chopped pecans
 

Filling:

1 8 ounce package cream cheese
1 egg
1/2 cup coconut
1/4 cup brown sugar

 

Directions:

1.  Preheat oven to 350°.
2.  Grease loaf pan.
3.  In large bowl with an electric mixer, combine all bread batter ingredients until well-mixed.
4.  In a separate bowl, beat cream cheese, egg, coconut and brown sugar.
5.  Pour half of bread batter into greased loaf pan.  Spoon half of the cream cheese mixture down the center.  Using a spatula, cut through to marble slightly.
6.  Top with remaining bread batter, then top with remaining cream cheese filling.
7.  Bake about 45 to 50 minutes, until toothpick inserted in center comes out clean.
