Shannon's Summer Salad: Arugula, Grapefruit & Avocado

Doesn't it seem that over the last decade, our creativity with salads has jumped by leaps and bounds?  Whereas the formerly boring lettuce-based side dish used to be perked up with the addition of a few tomatoes or carrots, nowadays fancy candied nuts, crumbled cheeses and exotic fruits pair with a growing variety of leafy greens.

This salad features all of these more 'modern' ingredients...very fresh, tasty and healthy!  And perfect on a warm August eve.

Shannon's Summer Salad

8-10 ounces (a nice serving bowl-full) pre-packed organic arugula (or other 'fancy' lettuce)

1 grapefruit, peeled, seeded and coarsely chopped

1 avocado, peeled, pitted and coarsely chopped

1/2 red onion, julienned

4 oz crumbled chevre (goat cheese)

4 oz candied walnuts (like Emerald brand)

Dressing to taste...I like Girard's Champagne Dressing



Toss and serve with crusty artisan bread and some light white wine.  Dine al freso if possible! ;)
