Peanut Butter Cups

I've written a few times about how my Mom inspired me to bake...she was always putting together some sort of sweet treat for our family to indulge in.  Her love for talking also rubbed off on me...her friends affectionately called her 'Chatty Kathy'.  One of her most requested recipes was that for her 'Peanut Butter Cups'--they are truly heavenly.  And way better than the store-bought kind...!

Chatty Kathy's Peanut Butter Cups

* 1/2 cup melted butter
*  3 cups powdered sugar
*  1 tsp vanilla
*  2 cups creamy peanut butter (use the cheap kind, not 'natural' varieties like Adam's)
*  1/2 cup brown sugar

*  12 oz Choc chips + 4 T butter

1)  With an electric mixer, blend the 1/2 cup melted butter, powdered sugar, vanilla, peanut butter and brown sugar until well-mixed.
2)  Melt the chocolate chips and 4 T butter in a double boiler.
3)  Press the peanut butter mixture into an ungreased 9x11" glass (Pyrex) baking dish.  Pour melted chocolate over the top and spread evenly.
4)  Refrigerate at least an hour.  Cut into bars.  Indulge and enjoy!
