Apple Cinnamon Dutch Baby Pancake

Apples are certainly in season here in Washington, and this is a delicious way to use them on a cold October morning.  I love this recipe because all of the ingredients are in my kitchen at any given time--I don't have to make a special grocery trip to pick up the right items.  If you don't have sour cream, you can substitute plain or vanilla yogurt.

APPLE CINNAMON DUTCH BABY PANCAKE

Ingredients:

*  2 T butter, separated
*  2 large organic honeycrisp apples, peeled, cored and sliced (1/3" slices)
*  3 T sugar
*  1/2 teaspoon cinnamon
*  1/4 teaspoon nutmeg
*  3 eggs
*  3/4 cup flour
*  3/4 cup milk (preferably 2% so it will be rich enough!)
*  1 T sour cream
*  1/8 teaspoon salt
*  1/2 teaspoon lemon juice
*  Powdered sugar for dusting

Directions:

1)  Preheat oven to 400°.   Put 1 T butter in pie dish.
2)  In a saute' pan over medium heat, melt the other Tablespoon of butter.  Add apples, sugar, cinnamon and nutmeg, stirring and cooking  until softened, about 3-5 minutes.
3)  Place pie dish in oven so as to melt butter.  Don't let it burn!
4)  In the meantime, place eggs, flour, milk, sour cream, salt and lemon juice in a mixing bowl.  Stir with whisk until a smooth batter forms...30 seconds or so.
5)  Remove warm pie dish from oven and pour batter in.  Scatter the apples on top.  Drizzle any remaining butter and sugar from the saute' pan onto the top.
6)  Bake in oven until pancake is puffed and golden brown (don't open oven early...you'll lose your puff!), 20-25 minutes.
7)  Remove from oven and dust with powdered sugar.  Serve immediately with some hot coffee and fresh fruit for a sweet little Sunday breakfast.
