Italian Sausage, Potatoes & Peppers

Yet another one-pot meal--this one is colorful, healthy, and quick--perfect on a chilly winter week night.



*  1 pound sweet and/or hot italian sausage, cut crosswise into thirds
*  1 pound small red potatoes, each cut in half
*  1 jumbo onion, cut into wedges
*  2 red and/or yellow peppers, cut into bite-sized chunks
*  2-4 cloves of garlic (or 2 Tablespoons minced garlic from the jar)
*  salt & pepper to taste
*  1/4 cup olive oil
*  1 T dried rosemary, or some fresh if you have it on hand


1)  Preheat oven to 450 degrees.
2)  In a large casserole dish, combine all ingredients, tossing to coat.
3)  Roast mixture about 25 to 30 minutes, turning with a spoon once or twice, until potatoes are fork tender and sausages are lightly browned.

That's it.  Seriously.  Delicious.  Serves 4.
