I love anything with pleats (skirts, jackets, cool seasonal slipcovers for my living room furniture...), so this recipe for Pleated Potatoes is right up my alley. My step-Mom Annie made them at our house during a visit last week. Delicious AND beautiful at the same time.
Annie’s Pleated Potatoes
6 medium baking potatoes (with skin)
Vegetable cooking spray
½ c butter (or more as needed)
1 Tbls. Chopped fresh chives
¼ tsp. chervil leaves (if you can find it)
¼ tsp. tarragon
Salt and pepper to taste
Cut potatoes crosswise into ¼ inch slices taking care not to cut all the way through so that potato remains intact. Place cut side up in a shallow pan coated with cooking spray or olive oil (I use olive oil).
Combine remaining ingredients, stir well. Brush potatoes with butter mixture.
Bake at 400 degrees for 1 hour. Baste occasionally with pan drippings.
