Strawberry Chevre SaladBy Shannon O'Donnell******************************************************************************************************** During my time in San Francisco, I fell in love with a wonderful little deli and bakery called Specialty's. They had the most delicious sandwiches and creative salads, plus decadent quarter-pound cookies in flavors ranging from 'black and white' to 'wheat germ chocolate chip' (my personal fave). There was a Specialty's at the base of the Transamerica Pyramid, and I would offer to go pick my husband up from work there just so I could dart into Specialty's for something yummy! I knew I would miss my favorite sandwich shop once I moved back north to Seattle, so imagine my delight in finding that Specialty's had expanded up to the Northwest! They now have several cafes in our region, including the one I frequent in University Village.
I noticed a nice summer-y salad on their menu while I was there last week, so I thought I would try to recreate it. Here is my version of their Strawberry Chevre Salad:
* 1 package pre-washed organic wild greens mix
* 4+ ounces crumbled chevre cheese
* Dozen or more organic strawberries, sliced
* 1/4 cup slivered red onion
* 1/2 cup candied walnuts
* Light salad dressing (I used raspberry walnut vinaigrette) to taste
Toss & enjoy with artisan bread and butter for a wonderful summer lunch.
